Summer Vegetable Pasta!
I don’t know about you guys, but I know that right before summer arrives, I crave some great new recipes that are perfect for the season and super yummy! So, let me save you some time (so you can use it to cook this delicious meal)!
Ingredients:
1 package of high protein rotini (from Barilla, yellow package!)
1 bag of Kale
1 Yellow Squash, cut into small chunks
1 Zucchini, cut into small chunks
1 bag of frozen butternut squash
1/2 onion, diced
2 garlic cloves, chopped
olive oil
parmesean
marinara sauce of choice (optional)
cracked pepper
salt
hot pepper flakes
Directions:
Cook rotini as usual, drain and set aside. Drizzle some olive oil in a pan set to medium heat. Add chopped garlic and diced onions, allow to cook until starting to caramelize and brown. Add squash, zucchini and frozen butternut squash. Allow to cook for a couple minutes, stirring occasionally. Add kale, keep stirring. Once mixture is cooked down and the butternut squash is soft, add the cracked pepper, salt and some hot pepper flakes to taste. If you want to add the marinara, now is the time! Totally optional but a delicious addition to the dish. I added about one cup to my pan. Once that is heated and well mixed in, you are ready to mix it into your pre-cooked rotini and serve! Top with freshly grated parmesan to taste.
