Kale Balsamic Sausage and Zoodles !
Colorful and delicious! Try this recipe out for a perfectly light noodle bowl!
Serves 1
Ingredients:
1-2 Bilinski kale and balsamic chicken sausage
300g zucchini noodles
100g cherry tomatoes
120g Brussel sprouts
30g Fat free balsamic dressing (optional but super yummy)
Instructions:
1. Heat oven to 400 degrees
2. Place Brussels sprouts on baking sheet, spray with cooking spray, add a little salt and pepper and cook for 20 min. After the timer goes off, add the tomatoes in with the Brussel sprouts and continue cooking for 15 min
3. While the veggies roast, heat up a sauté pan with cooking spray and add the zoodles. I like to cook at a higher heat to get them a little brown which adds flavor. This should only take a few minutes, usually around 5.
4. After those are cooked, set zoodles aside. Cut 1-2 chicken sausages into slices and add to the pan, brown on both sides.
5. When veggies are roasted add to a bowl the zoodles, tomatoes, Brussel sprouts and sausage, then top with a little fat free balsamic dressing!
