KATIE’S SPICY CHICKEN SAUSAGE AND KALE PASTA
I grew up in a large, loud, hungry Italian family. We are always cooking something–– homemade pasta, meatballs, pizelles… and when we aren’t cooking, we are planning our next family meal. Growing up, food was the center of our home–– we all love to EAT. So naturally, cutting out pasta from my diet just was not going to cut it! I am sharing with you today one of the most delicious, low-calorie, low-carb pasta dishes I recently came up with. I am calling it “Katie’s Spicy Italian Chicken Sausage and Kale Pasta”–– you will definitely want to give this one a go!
RECIPE:
-2 TB chopped onion
-1/2 garlic clove
-1/3c nonfat, low sodium chicken broth
-50g chopped kale
-1 Hot Italian chicken sausage link (365 Organics brand)
– 1 package Tofu Shirataake Noodles
Heat pan with nonstick spray, sauté chopped garlic and onion until golden. Cut up chicken sausage and add to pan, until lightly browned. Add kale, allow to cook down. Once kale is cooked down and dark green, add the chicken broth and rinsed noodles. Let the noodles simmer to get hot, add cracked pepper, salt, hot pepper flakes, and garlic powder to taste. SO YUMMY! With such low macros!
